Lunch Box Healthy Snack Ideas

My 11 year old has turned a major corner towards adolescence. I have no clue where my little girl has gone. She has always been a huge grazer but used to eat everything. Fruits, vegetables, yogurt, cheese sticks, and other healthy protein snacks. She now wants to eat anything and everything that comes out of a bag or box and live on junk food. I am on a new school-year mission to make some healthy snacks.  

I picked up this bag of flaxseed meal at Trader Joe's. I use flaxseed in my morning oatmeal but never bought this brand before. On the back of the package there was a recipe for energy bites.  I thought I would give it a try. 



I had all the ingredients in the house and I love a recipe that takes only 5 minutes to assemble! I decided to cut the recipe in half, in case it was a fail.  Here is the ingredient list:



1/2 cup rolled outs (Spout's organic rolled oats, from the bulk bin)
1/4 cup chocolate chips (Trader Joe's brand)
1/4 cup flaxseed meal (Trader Joe's brand)
1/4 cup crunchy peanut butter (I used creamy organic Once Again brand)
1/6 cup maple syrup (organic Trader Joe's brand)
1/2 tsp vanilla extract (Costco Kirkland's pure vanilla extract)

Mix everything together in glass bowl. Form into bite-sized balls and put on tray. I put them in a mini-muffin pan. Freeze for about 1 hour.  

Hubby and I said "yum" but the kiddo said "yuck."  Glad I didn't make more as the calories seem to go straight to my butt!
