Healthier Chicken Fingers

  1.  
    1. 1 1/2 pounds organic skinless chicken breasts
    2. 1 organic egg
    3. ~4 cups of organic corn flake cereal (I use Nature's Path)
    4. sesame seeds
    5. salt
    6. pepper
    7. 1-2 Tbsp organic butter
    8. cooking spray
Preheat oven to 400 degrees F.
Pound chicken breasts to even thickness. Cut into 1 inch finger strips.
Beat egg in a shallow dish.
Spray a baking sheet with cooking spray.
Put some cereal in a sealed plastic bag or spread on a piece of wax paper.  Crush with rolling pin to make cornflake crumbs (not too fine, you want some texture).  Put crumbs in another shallow dish.  Season with sesame seeds, salt, and pepper.
Dip each chicken piece into egg and then seasoned cereal  mix until fully coated and arrange on baking sheet.
Either melt butter and drizzle on top or put a small piece of butter on the top of each piece of chicken.
Bake for 20 minutes or until cooked through.  

 

Select your dipping sauce carefully because your condiments could be loaded with high fructose corn syrup, sugar, fat, salt, artificial colors and preservatives.  Our favorites are:
